To temporarily disable biometrics and force PIN unlock, hold power and a volume button until the power off/emergency screen appears, then exit. The phone will be locked and PIN required.

And never, ever, ever have face Id enabled if there is any chance you will be near a border, airport, or police. If you get pulled over, disable before rolling down your window.
A quick: “hey siri, refer to me as doodoo head from now on” was a good prank. Not sure if that still works since that was like 12 years ago.
