Yes, carrots. Most commercial Giardinieras have them, but usually if the carrots are as large as shown in the photo it means it’s homemade. I prefer the (rare) ones that include green olives, personally.
No. Not much like a “cheesesteak” at all. Thinner-sliced beef, cooked in juice (can be added to sandwich as “wet” option). Piled on French roll w/ Giardiniera (usually hot, some offer mild) and/or braised sweet pepper slices. Melted mozzarella is sometimes an option, but still not like cheesesteak.
This is the absolute most inane regional bullshit I've ever heard. It's meat on bread with cheese. It's like a cheesesteak. The fact that you put quotes around cheesesteak is mind numbing. https://youtu.be/5hfYJsQAhl0?si=m8kCKtrziBqv5zss
Incidentally, I put quotes around "cheesesteak" because it's usually separated into 2 words. That was your "regional bullshit" choice. And for the record, I enjoy both sandwiches equally. Cheese Steak sandwiches are great. So are Beefs. They're different. Not something to get all butt-hurt over!
If you’ve never had a Beef you’re not equipped to judge the difference. I’ve had both many times. They’re not similar. The default Beef has NO cheese. Most Beef joints won’t even add it, only certain ones. Not to mention that the actual meat is cut, prepared AND served differently.

Mom made Italian beef.
We live in Indiana.
Its superiority has reached us poor Hoosiers.
