I think the information theoretical distinction still matters, like it may touch your particles but if we can't see the downstream from that, it makes no difference to our experiment. My understanding is this is just math we use to model uncertainty when we want to persist it
I don't think that's true - see the double slit experiment. If a set of perpendicular screens is used to detect which slit the photons pass through, the interference pattern disappears.
I see what you're getting at, but if there is no ultimate observer then there is no experiment. That's as pointless of a thing to try to reason about as the existence of a god.
We know that the ultimate observer can see that a waveform existed or a photon, and we know that the waveform stops existing if we measure where the photons are. That's what matters.

Conscious minds have nothing to do with it, it has to do with things interacting with what is being measured. This happens without consciousness as well. When we measure, we interact with a particle. No consciousness needed to interact

Now, I'm far, far from an expert, but that's no worse an explanation for how quantum mechanics works than some of the accepted ones I have studied. So, been nominated for a Nobel yet?
I mean that is how a lot of research is. The distinction between tech and science is often less visible on the ground floor where both groups really are often more trying to develop and understand something more and see if it is possible.
