Take some lemons (any amount, I usually do a 3lb bag at a time).
Peel the lemons, then juice the naked lemons.
Combine the peels 1:1 with sugar by weight, and massage the peels into the sugar until it's released the oils and is all damp.

I just store it like that, peels and all, in the fridge for up to 2 weeks.
