I bet it would go best while combining the dry and wet ingredients before autolyse. That way it's fully incorporated rather than patches of really strong flavor or nothing at all. I'll have to give it shot with my next loaf, I love za'atar, probably 1-2 tbs for a 1 kg loaf?

If those clouds were facing south-ish, we got some really weird storms out of them in the Cincinnati area... Sunshine and concurrent "hail" the texture of slushees coming down. It was very odd.
