Ok, a bit tinkering and one happy accident later I got the files I wanted moved onto 11.
Currently formatting the other drive before installing more apps.
It'll be set up like it was before (primary for apps and files, secondary for games), but now with Windows 11.

There's going to be so much work to be done on that machine. Maybe I'll (eventually) get a SSD and clone the final setup on it.
Don't even need a big one, 512 is fine for a primary.
