I just didn't want to mix the meat in with the tomato sauce, just because it'd be hard to distinguish it. The leftover rendered fat in that pan is going to have onions/bell peppers fry in it, followed by some garlic & tomato paste. Then the red wine deglazes the pan, followed with some demi glace!

So I seared the 12-hour dry brined short ribs on my pan before adding it to the sous vide bag with beef tallow, parsley, garlic, rosemary, and thyme! It's in the sous vide now overnight and most of next day, to slowly braise before being taken off the bone and put into the manicotti filling!

My friend and I watched Damsel last night while cuddling, and not once (I repeat, not ONCE) was there any vore!!! The dragon wasn't hot (boo), teased one lil' mawshot, but instead of eating anyone, set them on fire in a boring fashion. At least the dragon spoke, but it looked uugglllyyyy. D:
