I thought creature tokens were by definition named after their creature types unless they are specifically defined legendary creature tokens.

It's because they probably didn't want to make Chocobo a creature type - so all the chocobo cards they print that care about bird kindred are still viable for other strategies in the game at large which makes they more likely to retain value.
