Probably those with fewer bells and whistles. Mint runs on a 2010 Mac mini. I wouldn’t expect to run KDE Plasma on such a machine.

You need to make an installer by etching the latest Linux Mint ISO file onto a USB flashdrive. Then restart the old PC holding down the key that accesses the BIOS (option key on a Mac). Plug the drive into a USB socket and restart the PC from that drive. It takes a few hours to learn the new OS.

Online banking requires the latest security upgrades. Linux Mint is currently guaranteeing these into the 2030s, so you can connect using Firefox etc.
One additional bonus that I noticed was that Java-based applications ran better with Linux Mint than with MacOS (High Sierra) on an old Mac mini.

Those can improve speed a bit, but the main problem is that many online services and applications require a more recent MacOS that no longer supports the old CPU. Linux is more forgiving in this respect, so you can continue to run the latest distro of Linux Mint (for example) on the old Mac CPU.
