This is a hill I am ready to die on. Lafayette boudin recipes are mealy, mushy, overly liver-y and gross. The only good Boudin in Lafayette uses recipes from the Cajun Prairie, Scott, or Saint Landry Parish.

90s high school me was so disappointed when Billy’s bought Rays… Rays was hands down the best around.
But Billy’s is still 1 million times better than any of Lafayette’s excuses for boudin. ( I’m looking at you, Earls)
