Usually, you're given material from the project and you audition with that. In the case of the dark Knight, because Nolan is so secretive, they wrote a scene (not from the movie) specifically for the audition.

I assumed smoked pork was a given. Swiss cheese. And I'll confess to liking yellow mustard on a lot of things, I grew up in the Midwest in the '80s, but a mild brown mustard would be my choice for the Cuban.
