Just like eggs its from the same issue , bird flu has wiped over 6mil of just chickens recently, not including cattle/wild birds/etc. Some major suppliers were hit so hard they projected it taking at least 2 yrs to get back to normal. Heres a bit of an overview of just how much in 3yrs is gone:
