I think just watching the original's deleted scenes will give people a pretty good idea of what Disney doesn't like showing in their movies.
Then when you put the remake next to it, I think it highlights how much /worse/ Disney has gotten when it comes to meddling with their recent films.

On YouTube, uselesspodcasts, 2 Ratchet & Clank devs do commentary for Ratchet 2 and 3.
Sly Cooper had dev commentary on every level after beating the time trials. Also had a "making of" video. All on YouTube.
DoubleFine has a ton of stuff, even inviting devs to talk about their own games.

Baumgartner Restoration - guy who restores old paintings
Primer - guy who makes evolution simulations
OddTinkering - guy who restores random things, but mostly consoles (also has no audible commentary)
