Unless you already have a distro in mind, I cannot say enough good things about Projects Bluefin, Aurora, or Bazzite. Self-maintaining, customizable, and zero pain.
Those are all Fedora based; I adapted pretty easily after years on Ubuntu and Debian Sid.

Python should be useful. A script should be able to read the data files, perhaps into Pandas or Polars data frames. Then you can work on it as necessary, then export it in the form you want.

There are some minor differences between platforms, such as file paths, or system calls, where you might try to use some core utils on Linux and something different on Windows. Otherwise, you can move your scripts pretty transparently.

If you swap to Linux, consider one of the really good Fedora Atomic flavors: Bluefin, Aurora, or Bazzite. They are run like clockwork, maintain themselves like smartphones, zero bullshit.

I used to fly 757s, and some had announcements and movies on a Linux based media server. Best thing about the system. Worst: terrible connectors pax would kick out and break the whole system. LOL attendants were always asking us to cycle the breakers to get a reboot.
