and then suddenly, frame by frame, the quality drops to give birth to this weird goat painting that I'm 100% sure would have been a a thousand times better if it was human-made.

There is no genAI used in S1. Extraweg was the artist in question and his 3D animation work is great - most likely his work here too. But the painted goat really really really looks like genAI, especially considereing that every shot in both opening title sequences is calculated by the milimetere -
