Terry and Kyo are easy to pick up as they are shoto types (Ken/Ryu). Ralf and Clark of the Ikari team are fun easy ones to play who mix in grappling, dinosaur/Tizoc is fun too.

I think graphic technology plateaued as well. things look incrementally better but they aren’t rapid leaps in 5 years like they were. More about how they are being used than anything else is the appeal nowadays imho
