I wish it had more in the way of a cohesive singleplayer experience, but Rooftops & Alleys really captures the magic of a game like Skate - doing even supposedly "easy" things is very difficult, so simply completing half a run can make you feel incredibly cool even after you fall face-first.

In Mario & Luigi: Superstar Saga, the Red Pepper item makes it harder for Mario and Luigi to jump. An unused animation exists that is theorized to have been intended for this. It likely ultimately went unused due to making Mario and Luigi look constipated.
