I definitely recommend playing around with your options though because tastes differ! It's also possible that a more robust grain mix like buckwheat or even cornmeal might work with more strongly-flavored beers. (Honestly oatmeal stout and buckwheat might be rad.)

I tend to go with lighter ales, since heavier beers like stouts can really overwhelm the batter. (Ask me how I know lol.) In this case Boont would be my bet!
