(Through tooling, better management, lower scale projects, whatever). I'm super sympathetic to devs and the costs of making a game. But at some point you just can't put that on the consumer and expect long term success. And I want console gaming to last forever.

Right but what happens when those 35+ year olds age out of the hobby or die? And I don't care about inflation, US average income hasn't risen at the same rate. That's all that matters: can consumers afford to buy your games (games plural) at scale. If the costs are too high, that's on them to fix.
