Macoun is another classic variety that's spicy, crisp, with a nice balance of tart and sweet, and a thin skin. The skin is great for eating, but makes it easy to bruise and hard to ship.

Winesaps are tasty, but they bruise easily and aren't great keepers. They're a classic heirloom that works well for pick your own or a small backyard orchard, but not so much for shipping to grocery stores.
