When people ask me what music I like instead of defaulting to "a bit of everything really" I'm going to say "music where an alarm can be going off for a whole minute before I realise it's not part of the song"

1970 (or so) Jeff Beck performed at Berkeley Community Theater. A fire alarm accidentally went off. We in the audience didn't notice until Jeff ended the tune
I like music that makes me sing really loud in the car and makes the dog in the next car start howling. This may or may not be based on actual events 😉
I used to say "anything but pop" but I learned people found that offensive. Now I say "music that forces me to listen to it and not just hear it" and that gets people interested and curious.
I like telling people that I like listening to an extremely wide variety of music. Heard of filk, how about heavy metal pirate sea chantys. (parody country, rock, pop, etc,) logging folk songs. I love searching for weird music on YouTube. Never know what you'll find.

I once lived with a fella who passed me the remote and said what do you want to listen to next, I struggled to explain that maybe what I was into was too abrasive and not really part music. He did it again later and pulled it back saying oh sorry I forgot, you don't really like music do you?
I find this a frustrating assumption because I fucking love music and really do roll from genre to genre depending on mood. I like anything as long as it's good.

My answer, fwiw, is 60's Rock and Roll mixed with an overdose of Transfusion Pioneers from Philadelphia, the Disco Biscuits.
My current obsessions are the forgotten Eno albums from the era between his ambient peak and his revival. I’m also listening to a lot of Gil Scott Heron and the instrumental tracks from David Bowie’s Heroes. Last summer was bossa nova. And I make synth music so I’m always listening to DnB, rave etc.
I used to listen to a lot of hip hop but my daughter is obsessed so I never have to put it on I get my fix vicariously. I also listen to lots of folk but that’s more of a spring time thing. Festival season I listen to metal and harder dance music such as gabba. I’m a seasonal guy.
