It is absolutely delicious.
Blind bake your pastry case. Cook your apples in a pan with sugar etc.
allow to cool, add to your pre baked pastry case then top with Italian meringue and finish in the oven or use a blowtorch

If you can get ginger wine then use that to add an amazing flavour to your rhubarb.
