Spice cake is my weakness but this sounds bland AF. I do cinnamon, allspice, nutmeg, ginger, cardamom, and cloves when I do a spice cake, and I punch up the quantities. Substitute the raisins for chopped apples, substitute the almonds for walnuts.
This looks close to a muffin batter recipe (less the eggs) - the kind where a large-ish amount of baking soda interacts with the fruits and lifts when baked.
Sounds good. I’d increase the spices tho.
If anyone does bake this, make sure to use the seeded raisins, you need the seeds to bind the cake. They replace the eggs.
I would definitely multiply those spice amounts significantly. Were unseeded raisins a thing at some point? I’ve never before seen a recipe that specified the raisins need to be seeded 🤷🏻♀️
