This is what I am pondering, and I agree that the milk there seems like the wrong call. The hard part would be getting the pickle dry enough for a thin crisp layer of chocolate to stick.

I'm also thinking a fermented kosher pickle would be better than a vinegar pickle. More salty, less sharp.
