I skimmed the spec but didn’t see anything on mobile, I wonder how (and if at all) mobile browsers are going to implement it. I foresee crucial info put inside the select and mobile browsers refusing to render

Well, like any initial release, it's going to take time before it's more widely available across browsers. So you either decide it's a progressive enhancement or you have to wait (depending on your support matrix)
