I disagree. Users should be warned that the processor may not be “secure and private” as Apple have no control over that provider. Maybe it is, maybe it isn’t.

So I say, why stay there? Why not just write: “the processor might be a scammer. Apple cannot be held responsible for any scam practice induced by following this external purchase”
As in another reply I've made a message like "you're leaving Apple to make this payment, click here to learn how to ensure you are making a safe and secure payment" would be ideal.
better would be to include a link to guidance to educate a user on how to identify a reasonably secure payment rather than trying to scare them back Apple's.
Absolutely. This can be an opportunity to help educate folk that Apple has, for better or worse, kept shielded from the reality of online payments while also being clear that they're leaving Apple. The large evil bank I work for does something similar for links that take users off our app.

The wording & the scary tactic are the issues

Extreme to make my point
When sending off to any other platform to warn users. Yes.
Something to at least make a user think in the moment is also needed.
