Your partner is smart. An E. Coli O157:H7 infection can take up to two weeks to show presentable symptoms. If it progresses to hemolytic uremic syndrome that can take another week. At which point long term kidney damage is almost a certainty. It’s no joke.

But baby carrots ARE delicious. 🤷‍♂️
