People made jello mold recipes in the 70s and 80's, at least in Louisville where I'm from. For Thanksgiving my mom used to make one with jello, cranberry sauce, some kind of nuts and I don't know what else!
Because Utah is the last stronghold of Jello salad, which requires adding the extra stuff in the correct quantities at the correct time if it's going to set properly.
I dunno, making mac and cheese from scratch can be tricky. Getting the cheese sauce right, getting the top the right consistency without burning, making sure the noodles cook but don’t overcook… it’s a lot, especially if you’ve only ever made it from a box before.

Yeah, that one through me. But then I remember my daughter coming over a few years back to watch me make mashed potatoes. It must be a generational thing. Too many modern convenience now. My next-door neighbor gets coffee delivered by DoorDash. I asked. He said he doesn't know how to make it.
Mashed potatoes aren't as ubiquitous in the Southwest. Also, a lot of people call them whipped potatoes and may be trying to figure out what the heck y'all are going on about
