Context: I'll be teaching Coding for Psychology and anticipate teaching some Python and some R so Quarto seems like the obvious move... just don't want to regret a shift after using RMarkdown for 6-7 years now. Probably time to suck it up.

RMarkdown still feels more natural and easier for starters, but Quarto seems to be the future, for now. So Quarto it would be. Actually, Quarto may not be more difficult for newcomers, unless one starts digging into css etc.
you can automise a lot of the transition from Rmd to Qmd ... pandoc and ChatGPT are really useful for this - then using quarto feels a lot more modern and fast ... next to all the other benefits ... go for it :)
