maybe this is dumb but
what are good snacks/easy meals that are: healthy, low calorie, vegetarian
also I feel like I forget what food I have in my kitchen or I don't realize I'm hungry until I feel sick and then I just eat garbage

Mixed fruit salad
Steamed broccoli stir fried with onion garlic, carrots.
Vegetable chilli
They then work great with Quorn or tofu and some sort of sauce like pesto or a pasta sauce as a meal. Also vegetarian chilli and eggs is a good hearty but healthy meal.
—Trader Joe’s carries good organic ones.
(I’m gluten free too. And the GF bread bloats me.)
For snacks, I like lightly salted almonds, crackers with sharp cheddar cheese, bananas
Prep is just dumping a bunch of cans of stuff into a slow cooker (drained or undrained--I don't drain bc I'm lazy & it makes more soup). Then you forget about it until ready.
- 1 can of kidney beans
- 1 can of corn
- 1 an of peas
mix up in a tupperware
1. Take 1 cup worth out
2. A splash of canola
3. "spices"
4. Fry up gently
"spices" typically involve chili, turmeric, random stuff.
chickpeas + diced tomato + diced cucumber + lemon juice + lots of pepper + oil if you want
salsa + black beans + corn + avocado if you want + crushed tortilla chips
Scrambled eggs with a side of pinto beans
Spinach cheese omelettes
Light mozz cheese sticks with a veg side for snack
Or zero sugar nonfat Greek yogurt with a fruit side.
Make big batch curry/stew/soup and freeze in portions.
Popcorn is a decent snack!
IF you like radishes, they can be eaten after washed and cut as a snack too.
I keep in my backpack nuts, brazilian nuts, cashews and during some time, I had roasted edamame.
I'm not vegan, but, these are options
Spring greens
Chocolate balls made with puréed dates, raw oats, cacao/carob, dash of coffee, bit of melted coconut oil and rolled in shredded coconut. Pop in refrigerator.
Grape tomato, olives, feta (don’t need to cut or chop this stuff) add red onion and cucumber if you’re feeling like chopping veggies - add some fresh dill if ur fancy
Mix in a bowl and let cool in the fridge
At one point when about to give in, reached into the luxury cake bar shelf at Tesco's and came out holding a Kellogg's Nutri-Grain. Divine intervention.
Nut butters

Pickles
Cucumbers (cut up in salted water, for dipping, etc)
Quesadillas w/ non-dairy cheese
Pasta & pesto
Garlic bread
Make big batches of soup & freeze servings

There’re not hard to make. Homemade hummus is far and away tastier than corporate poison sludge like Sabra.
Homemade also helps takes food out of the mouths of CEOs. Feed yourself while helping to starve an oligarch!
not boycotting entirely, but I can only do what I can do. The results are vastly better. Spend time on getting the chickpeas and tahini smooth first, and it's be amazing.
Don't know how low you want to go, but slice some fruits and throw them in a bowl that can last a good couple of hours.
Pretzels at least are not fried.
A fav of mine is bananas, oat meal, coconut milk (im lactose intolerant) oats and I add with pumpkin spice
It's minimal effort and you can switch up seasonings for variety!
It replace tofu with cucumber or zucchini is also nice and refreshing.
Or just put a lot of veg in a soup.
Salmon, broccoli and rice is a very easy meal.
Greek yogurt with berry jam, or a baked potato, or just about anything
Apple slices, cheap caramel, walnuts, salt
Popcorn that you pop yourself, takes up a lot of chewing space to calories (or shake on sugar for a sweet)
(to me) they resemble the texture of popcorn but without kernels
- Short fridge life for "I need to eat this" motivation
- Decent nutritional value
- Makes you feel very mediterranen
- Can be prepared in minutes (or eaten without any preparation really, if push comes to shove)
What’s work for me as a snack-aholic is I buy what I like in as small a quantity I can and throw away the rest if it’s more than I should eat. I try to keep the rest but I don’t forget it exists so I just keep going back for more
Cucumbers, tomatoes, red onion, Kalamata olives and goat cheese. With a dressing of olive oil, red wine vinegar, oregano (or zaatar), Dijon mustard and a splash of lemon.
Make a big bowl and keep it in the fridge. Will last for a week.
They are always hidden in really weird spots in grocery stores, you are looking for this:
😉
Baby tomatoes
Celery (assuming you’re in a country where the celery tastes like celery and not like pesticide)
And they don't like too many leafy greens, so they make their version very apple-heavy, so that's an option if you also aren't a big fan of leafy greens
If it’s sweet - fruit fruit and more fruit. Some of the sweetest fruits are bananas and oranges. Chase with some chia seeds and a glass of water for fullness
Also, apples and pears, and if I could underline "pears", I would.
I like fit and active vanilla Greek yogurt with thawed from frozen blueberries, or cottage cheese with unsweetened applesauce.
Lunch and dinner, salads with beans and feta cheese. Sliced tomatoes, basil leaves, and sliced mozzarella on low-carb toast.
For dinner, roasted veggies in the oven. Or steamed veggies.
My favorite veggies are the california blend steam bags; broccoli, cauliflower, carrots
Make sure you add eggs, tofu, beans, or another protein to your dinner for balance
When I am introduced it’s this is Dawn she doesn’t eat meat. 😂😂😂😂
Preheat oven to 350, roughly 10-12 minutes, varies on gas or electric.
Rice, tofu, paprika & broccoli fit to every asian sauce you can buy in the store. I use teriyaki sauce. It's low kcal and if you want you can make it easily yourself.
Sugar free soda for the sweet cravings.
