I’m not a vegetarian, but a lot of my meals are suitable for vegetarians for choice, and now I’ve learned how to REALLY pack the flavour into beans I use them a LOT.

I also use Ottelenghi and Anna Jones quite a bit…but adapt them all!
So I use a bit more Gorgonzola/ Stilton more walnuts and more lemon here. The beans used really matter.

Last night: haricots (home cooked), red onion, garlic & lots of parsley. Mashed spud, carrots with courgette & shredded lettuce.
Chickpeas with apricots.
Puy lentils with chestnuts.
Butter bean, leek, carrot & tomato crumble.
Lentils & tomatoes for pasta sauce.
Coral lentil, potato/butternut, spinach dal is one of my favourite comfort foods (small chunks of meat/pawns optional)
I tend to use someone else recipes then adapt after the first go to give it the twist or depth/warmth that I want.

It does make a difference to use really good beans. Altho’ soaking good dried beans & cooking them works well too, if you can be arsed!

I tend to use dried speckled lentils for dark lentil dishes as they don’t need soaking but absorb the flavours of the dish so well.
