Check out either Final Fantasy or Dragon Quest. Both top tier franchises, and since each game is self-contained story-wose, no need to have any prior knowledge.
Any of the Persona titles are also great, especially if you want some light social elements
To get your feet wet I’d recommend Final Fantasy 6 or 9, and no not because of the obvious joke. If those strike your fancy I’d recommend Persona 4 Golden. For the hardcore stuff, Shin Megami Tensei 3 Nocturne that game doesn’t mess around, especially on hard mode (well duh hard mode is hard.)

can’t go wrong with Persona 5 Royal or Dragon Quest XI for something more modern.
the FFVII remake games are fantastic too, though playing the OG first makes them hit so much harder
