Unpacked all my stuff and yeah I’m missing most of my pots, coffee grinder, and French press…the heck. What’s your favorite coffee making instruments since I have to shop?

it doesn't really get much better than french press and a decent burr wheel grinder. but if you really want to mix it up for fun, aeropress coffee makers render an interesting flavor profile and it's pretty simple technology
We have ALL of the coffee stuff and ngl, if you drink almost 365 made at home, then I'd go with some sort of drip coffee maker. You can set it to brew overnight, easier cleanup than a lot of other options. We love our French press and espresso machine, but it's more work on the front or back end.
I would buy a burr grinder if you can swing it over a blade grinder. Grinding at home makes a huge difference and you can store beans in the freezer. If you plan to make espresso at home, you're going to need to spend >$200, but a good burr grinder for all the rests can be had for far less.
I have learned after much experimentation that nothing beats a pour over with a 16:1 water: fresh-ground coffee ratio by weight.

Reasonably priced equipment from recognizable brands will make you coffee good enough for 99% of occasions. We mostly have stuff you can buy from Target, but get the Chemex filters in bulk when we have discounts or coupons.
I use the Cosori brand pour over that basically the same as the Chemex everyone likes but a bit cheaper. Also I switched to an electric kettle about a year ago and have been enjoying that. And a KitchenAid brand grinder, I got at an office gift exchange years ago.
I use a Rancilio espresso maker, burr grinder for morning joe. Any other time, it’s cold brew. I use the original Toddy system when I’m home and the new Oxo cold brew one when visiting my daughter and grands. I’d like to plug Peet’s new ultra coffee concentrate which is magic.
