I hope bakeries can plan for alternatives to eggs - ie: applesauce or tofu They will have to rework recipes. This bird flu is not going away anytime soon.

You can use applesauce, mashed banana, aquafaba, yogurt, buttermilk, or pumpkin puree as egg substitutes in baking. Here are some other ideas.
