You could see if anything is available in a Kloster if you don't mind some money going to the church. We stayed in one in Bamberg and it was central and affordable.

Why don't you try something like "Familienferienstätte" or "Tagungshaus" or a "Naturfreundehaus"? My family likes such places for coming together.
You can book accomodation, food and extra rooms.
