this is done in a lot of 3D works, including big 3D animated films, too! an easy example is Encanto; animators show how they do these exact things for particular shots.

This isn't to say that Noshi's default pose WAS a T-pose of any kind- some models break this rule, particularly ones that don't need to move very much in the first place. Would've been easier to model Noshi with its neck already bent if all it was going to do was move it a little bit, like in-game.

Seems like it would have made more sense to model it sticking straight out in front since that's closer to the intended pose, or to at least have the head facing straight up to avoid the weird distortion...

the default pose on a model is designed so when the model is actually animated no part of it is distorted, and doesn't necessarily need to be a T or A pose. The "T" pose tends to get distorted any time the default pose is on a non-humanoid with lots of curved limbs.
