There are way too many to pick out only one. But Jose Feliciano's "Light My Fire" is up there because it was entirely different from the Doors' original.
Go Now - Moody Blues
Before The Moody Blues recorded it, this was an obscure soul single for Bessie Banks, who released it in 1964. Jerry Leiber and Mike Stoller produced her recording, and it was written by her husband Larry Banks. https://youtu.be/KV9W0YJV3Tc?si=I2TenOFVSsqIX_Km

Paul Anka heard this French song while traving in France on holiday, gave it completely new Lyrics with Frank Sinatra in mind named "My Way" gave it to Frank...
Meisner: The line 'take it to the limit' was to keep trying before you reach a point in your life where you feel you've done everything & seen everything, sort of feeling, you know, part of getting old. just take it to the limit one more time, like every day just keep, you know, punching away at it
Tough choice on Grapevine- I love the Pips version too.
I am glad I still have my Motown vinyls with different acts covering each other. For Grapevine I have one with the Temps, and another with the Miracles doing it.
Miracles were the original to record in 1966 but it was released in 1968 after the Pips recorded and released in 1967, Gaye was the second to record in 1967 but the third to release as a single in 1968 after the Miracles.
What was strange Gaye had it on his own album in 1968 but did not have permission to release it as a single until Gordy at Motown was begged by DJs that they wanted it as a single.
Have probably shared it before...I never tire of this cover of Joni Mitchell's Woodstock, by the talented Swedish duo, Good Harvest. Their beautiful voices and harmonies bring something truly special to the song. https://youtu.be/8x-DoOYJn0M?si=7LO0jMLg9kCY8BRg
