Sodium citrate is a key ingredient in making a cheese sauce creamy. It contains the elements Sodium (Na), Carbon (C), Hydrogen (H) and Oxygen (O) i.e. NaCHO in the formula Na₃C₆H₅O₇.

Basic Cheese sauce: Roux (butter & flour, I use GF), milk (I generally add a some heavy cream), and cheese of your choice. Easy Peasy. the hardest part is the stirring.
