For me personally, I would say "Jurassic Park". It aged well and is aimed at a wide audience. It mixes adventure, thriller and a bit of horror. There's a good story with a profound message. And a perfect mix of practical and digital effects when it's needed. Topped of by an amazing soundtrack.
Probably Kung fu hustle, I found myself recently falling back to HK cinema from the golden days. A better tomorrow 1 and 2 are also up there (I'm pretty biased to 2 personally).
Its one of those stories that interweaves the lives of a bunch of characters so theres some real emotional stuff, but it isn't all sad. Its an extremely good movie.
LOTR and Star Wars are always high on my list but the Dark Knight Trilogy is also up there for me. When in doubt Gladiator is a go to for me too. (Also, I have zero ability to pick one thing, lol).
