But the upside is far less fuckery with the scraps.
Cutting with a bench scraper and pushing the dough out (never pull up) helps to preserve the layers and flaking.

i too gather scraps, the gnarly biscuits are immediately claimed by my daughter who prefers them
my biscuit game was never as good before i discovered this (these two flours use softer wheat)
I think yours looks great!
1 lb of sausage, brown over medium heat.
Add a tablespoon of butter.
Cover with 1/4 cup AP flour.
Cook for a few minutes while stirring.
Add 1 cup cream and 1 1/2 cup whole milk.
Add a teaspoon of sage and kosher salt.
Cook until thickened (about 5-6 minutes). Generously pepper.
(But seriously, nutmeg is a great addition to any cream based sauce/gravy, sausage gravy included)
