They can be flavored with extracts or cocoa powder to be anything from chocolate peppermint to lemon or vanilla. Probably depends on just how low cal you're trying to get though or if the sugar spike is the what you're trying to avoid.
I sometimes use aquafaba as a foaming agent to replace egg white in cocktails. There appear to be recipes for meringues using it. Aquafaba meringue.

Chop up 4 very ripe bananas and freeze them. Also freeze the strawberries.
Let's get to it:
Put it in a food processor.
Blend for a while, it will become a bit granular.
Stop, stir a little.
Blend again until creamy.
Done, ice cream! No added sugar.
