Ruth Reichl's turkey and white bean chili with tomatillos is out of this word.

Obviously, cook your own beans (ideally, Mayocoba), do not use canned white beans.

In all other ways, the recipe is unassailable.

I’ve been converted to *authentic* Texas chili, which honestly really comes into its own when it’s cold and shitty out. I’m good with all chili styles and yeah Texas loves to bloviate about itself like no other state. But this is good.
