I used to use Caputo 00 but switched to Caputo Pizzeria (Tradizionale) which is still 00 but specifically for pizza. Don't get me wrong....the Roberta's recipe is good, it's just that there really is a taste difference btwn using 2 g. of yeast for a 4 hr rise & 0.1 g of yeast for an 9 hr rise.
