Yeah! You use a mic that's actually 4 mics pointing in different directions, then it joins the 4 channels into a spherical soundscape, so as you rotate ingame, the sounds rotate as well.
It solves the problem of needing to place sounds in the world as emitters, which can result in sparse soundscapes, or placing stereo field recordings in the game non-diagetically like music, so the birds on your left would remain on your left after turning.
Yep! I have seen SFX that are "calculated" by the engine(ie, the typical sound of a machine in a room on 3d first person game) in stereo instead of mono, and changing to mono not only decreases the file size but also improves the spatial audio when used properly
