They taste very gingery…I’ve had them in salads before, but this is my first time pickling them. Apparently nice served like pickled ginger with sushi or as a light pickled side with Asian food. We’re going to try them in a poke bowl tomorrow.

I used rice vinegar. (With a bit of star anise and garlic). It was pretty good on bibimbap or noodles. Doesn’t save long.
