Also no amount of coding genius compensates for lack of input from actual experts across many domains.
Any genius is also necessarily also an utter klutz in other areas, as a result of years of selective focus.

The most common one is called git. It stores all saved changes. Restoring is trivial & common
Either the guy is lying, or the guy who "recreated everything from scratch" actually just restored from the last save point. Which is a ten second job.
It would be incredibly dumb & reckless to not use it
