So our little guy is (mostly) non-verbal autistic and *very* picky about food. Yesterday, he tried raw kale for the first time and was gulping it down while giggling with joy. I'm worried now he has undiagnosed yuppieness.

I'm glad he found something he liked. I know food aversion can be tricky to navigate, so in vase you don't already know about it, this is a book specifically written to help with your little guy's eating.
On the one hand, he really likes microwave mac and cheese. On the other hand, he only likes French yogurt. On the third hand, if he has a philosophy about why he likes both, that could be explained by undiagnosed Foodie.
When I was a kid I would totally just open up the fridge and grab some iceberg lettuce and crunch on it. I had no problem with eating salad but couldn't stand dressing. Grandmother always made me a special bowl of undressed salad.
I work with very impacted autistic kids (and am autistic myself) and its amazing to find something where they show the kind of enjoyment other people can share in.
had the same(still have but it’s better at 32 yrs)issue with our Asperger’s son.We got him to eat green peas tellin him they were baby green baseballs(he loved baseball) WHILE taking his picture every bite & getting him excited about it -eating something green - he still prefers tan foods
It's just sign language dude. Stop buying into the marketing. English is 'simplified' for babies/tots as well, we don't call it 'Baby English'. No person within the deaf community would call it 'baby sign'. Respect the language.
I now call it baby pidgin, annoying everyone, but that’s closer to accurate. And swear by using it. Beats yelling across a noisy playgroup to say snacks are ready.
My son is the same except he’s the opposite of a yuppie — I try to get him to eat all sorts of foods but he primarily wants red baron pepperoni pizzas. 🤷♂️
Has he tried other brassica cultivars, or any fermented variants? If he enjoys brussel sprouts unadulterated by pork fats, the yuppieness is almost certainly a terminal condition.

Best wishes!
Also my mother used to make Mac and cheese from scratch that my sister and I would tell her was not as good as the stuff from the box.
And we found that using baby sign language really helps with communication development, even if the kid doesn't talk.
