Just asked Google how to block AI Overview, and AI Overview helpfully pointed me toward the Chrome extension Hide Google AI Overviews.

I've loaded a Firefox extension, "udm=14" which makes AI-free Google my default search engine in preferred browser. "-AI -prompt" also works as a (clunky) workaround on a case by case basis.

DuckDuckGo is a good choice, results come from Bing.

https://Startpage.com is also worthwhile, and results come from Google.

I use both at different times, or click on web results on the Google search. It all depends upon the use case.
