Per the unanimous 9th circuit ruling in US v. Jeremy Travis Payne, police can legally compel you to unlock your phone if your security is biometric (face, fingerprint etc); however, they need a warrant to compel you to enter a pin or other password.
Adjust your settings accordingly.

Have we ALL lost our common sense?
I knew about the button toggles to reboot, but didn’t realize it forces the PIN after (even if you cancel).
Now I can enjoy the benefits of Face ID and force it to PIN in a single moment.

Also, make a habit of always locking your phone by pressing the button on the right side every time you set it down.
