Why is there a strain of leftist who seems to think that if the West pulls out of Ukraine and lets it fall, lets Russia have that great swathe of land, that they'd just stop?

Did they stop after Georgia? No, they hit Crimea. After Crimea? Nope, that's how we got here. They won't stop.
